Ingredients:
1/2 cup olive oil
1 teaspoon sea salt
1 teaspoon ground black pepper
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon cayenne pepper
2 cloves garlic, minced
3 tablespoons finely chopped onion
1/2
cup chopped fresh parsley
1-1/2 cups beer
*If you prefer not to use beer,
you can replace with apple cider or ginger ale.
Instructions:
Pour olive oil into a 2-cup liquid measuring cup.
Mix together salt, pepper, paprika, cumin, and cayenne pepper
Add olive oil minced garlic, onions, and parsley.
(hint) For a really good marinade "sauce"
Place into a blender and "puree" until everything a saucy consistency
Then Slowly add beer to the mix - as it will cause the mixture to foam and bubble slightly.
Mix again, place legs in ziplock bag, then pour marinade over the chicken in the zip top bag.
Remove as much air as possible from the bag and seal. Turn the bag from side to side
to make sure all chicken has been coated with the marinade.
Place the bag flat on a small, rimmed kitchen sheet pan and into the refrigerator.
Allow to sit up for 2 hours or overnight for better results,
Turn the bag over every few hours to keep the chicken coated.
Baking or Grilling:
Place on flat pan such as a pizza pan. Just be sure pan has lip to retain meat juices
Bake in oven at 275 deg for 90 minutes, baste with more marinade
then wrap tightly in foil, reduce oven to 175 deg
Bake for 2 more hours
Notes:
Time does not include time to marinate chicken.
Marinade works best for about 5 pounds of Chicken Legs.
If you prefer not to use beer, you can replace with apple cider or ginger ale.
